Victor's Fine Dining by Christian Bau stands for uncompromising cuisine that focuses almost exclusively on fish, seafood, and vegetables of the highest quality. We use the most exclusive and freshest products available on the global market and refine them in our very own style—the "bau.stil."
Paris – Tokyo Menu
Classically grounded. Far Eastern inspired. Spectacularly served. Our signature "Paris – Tokyo" menu is a culinary journey through the vibrant changing seasons – from classic French haute cuisine to the fascinating flavors, techniques, and traditions of Japan. We always use the finest seasonal produce available.
Tradition & Evolution Menu
Our five-course "Tradition & Evolution" menu is a modern interpretation of classic dishes and a tribute to Christian Bau's culinary roots. The classically structured menu consists of a cold starter, a seafood intermediate course, a fish dish, a main course with meat, and a dessert. The menu can be supplemented with aromatic cheese from the cheese trolley. On request, the menu can be reduced to four courses on Thursdays (dinner), Saturdays (lunch), and Sundays (lunch & dinner).

"Einfach Bau" menu package
Only available on Thursdays (dinner), Saturdays (lunch), and Sundays (lunch & dinner). This introductory arrangement presents the incomparable "bau.stil" in five courses—accompanied by four glasses of wine, an aperitif, mineral water, and a hot drink. Each table will also receive a copy of the book "Einfach Bau – Sterneküche für zu Hause" (Simply Bau – Michelin-starred cuisine for your home).

Menu with overnight stay (including fruit plate, chocolates, ½ bottle of Laurent-Perrier champagne): €540 per person in a double room, €590 per person in a suite
"Paris – Tokyo" menu arrangement
This arrangement offers you the full fine dining experience with the legendary signature menu "Paris – Tokyo." The full experience naturally also includes a comprehensive wine pairing by our sommelier. You will also enjoy an aperitif, a glass of Laurent-Perrier's prestigious "Grand Siècle" cuvée, mineral water, and a hot drink. Each table will also receive a copy of the book "Paris – Tokyo: Passing on a Culinary DNA." This menu arrangement can only be booked with an overnight stay. Bookable from May 2026.

"Le Cercle Gastronomique" menu package
Exclusively for restaurateurs, hoteliers, and business customers. This menu arrangement is specifically aimed at colleagues in the industry. Here you can expect a unique surprise menu consisting of seven selected courses—with five glasses of wine, an aperitif, a glass of "Sélection Christian Bau" champagne, mineral water, and a hot drink.

Chef's Table menu
Bookable for four to six people. Take a seat at our Chef's Table and enjoy a bottle of Laurent-Perrier's prestigious "Grand Siècle" cuvée to start with. This is followed by a phenomenal culinary journey, accompanied by exquisite wines on request, expertly presented by our sommelier. Individual dishes are served personally by our chefs and finished at the table. The menu is tailored to your individual preferences before your visit, as is an overnight stay at our hotel.
